Baked oatmeal is a favorite in our house. It's so comforting and everyone likes it (one of my boys doesn't love the texture of regular stovetop oatmeal but loves this). I make it a few different ways, and this is the most recent iteration. My husband and I usually eat breakfast around noon so I love that I can make it for us and then have a healthy, filling breakfast ready for our boys the next morning.
INGREDIENTS
3 cups oats
1/4 cup ground flax seed (optional)
1/2 cup brown sugar
1 1/2 cups milk
1/4 cup melted butter
2 eggs
2 tsp baking powder
1 tsp salt
1/2 tsp almond extract
1 1/2 cups blueberries
top with almonds
mix ingredients thoroughly
pour into a baking dish (I use an 8x8 square)
bake at 375 for 30-35 minutes
VARIATION
omit almond extract and blueberries
add 2 tsp cinnamon and 2 tsp vanilla extract
we like this variation with chopped apples (mixed in before baking)
or topped with our homemade apple butter (when served)
A couple of notes -- Make ahead for easy mornings! I throw individual portions into glass storage containers so we can reheat for my kids in the morning. You can also throw the mixture into muffin tins for easy grab and go breakfasts. You can also reduce the sugar if desired or swap out for honey or your favorite sweetener. This is a very flexible recipe so as long as there's enough liquid to oat ratio, you can swap out ingredients for what your family likes, has on hand, or for your specific dietary needs.
